Coconut Fried Rice with Suppy!

We are here with a super yummy recipe that will unlock a myriad of flavours for your taste buds. After you try this recipe, you won’t want to eat rice any other way! This meal will reveal flavours you never knew existed…it is that good! Coconut Fried Rice is basically a rice meal, cooked in coconut milk and stir-fried in vegetable sauce with a variety of protein. Without any further ado, let’s dive into the ingredients and preparations.

Ingredients

2 cups of Rice (basmati or any good parboiled rice), 2 cups or 500g of Coconut milk, 1 cup of chicken broth & breasts, 1 cup of shrimps (optional), ½ cup of diced liver, carrots, green peas, sweet corn, spring onions, 2 medium sized bell peppers (green and red), chili pepper (optional), 2 cloves of garlic, 1 large onions, 1 cooking spoon of vegetable oil,  2 tablespoonful of dark soy sauce, 1 tablespoonful of oyster sauce (optional), 1 teaspoonful of fried rice spice, 2 Suppy cubes, 1 teaspoonful thyme (optional), curry and salt to taste.

Directions

Wash rice thoroughly with clean water and place in a clean pot. Add in coconut milk and chicken broth with curry, thyme and a pinch of salt. Bring mixture to a boil at high heat, then reduce heat to the lowest and allow the rice to cook slowly until it becomes soft, but not soggy. Turn off heat and allow to cool. In a different pan, pour the vegetable oil and add in chicken breast and fry until colour changes to a golden brown. Add in shrimps and liver and stir fry for a few minutes, then transfer the protein content to a separate bowl. Add in a little vegetable oil to fry the veggies. Add in onions and fry for about 2 minutes, then add in the rest of the vegetables with exception to the spring onions. Add in all seasoning and spice to taste. Add in soy and oyster sauce, then stir in the cooked rice with the fried proteins. Add in the spring onions also, reduce heat, cover and allow to steam for a few minutes. Turn off heat and serve with fried plantain or peppered goat meat and a chilled drink!
